I found the following recipe in the Food & Nutrition magazine by the Academy of Nutrition and Dietetics. It is a recipe that substitutes regular pizza crust with a crust made from cauliflower. I made it earlier this week, and was very pleased with the turn out. It is a fairly easy recipe to follow. The only part that took some time was the preparation. Also, I would recommend to double or even triple the recipe because for me it barely fed four people, even though the recipe says it will serve 8.
Give it a try! It is a great way to get more vegetables in your diet and your family’s diet without having to sacrifice taste and flavor. Even better, get your kids involved! Have younger children measure out the herbs, and older kids can grate the cheese and combine ingredients.
You Won’t Believe It’s Cauliflower Pizza Crust
1 cup cooked riced cauliflower – after cooked, shred cauliflower with a cheese grater or potato ricer.
1 cup part-skim mozzarella cheese, shredded
½ tsp. dried fennel
1 tsp. dried oregano
2 tsps. Dried parsley
Preheat oven to 450°F. Spray cookie sheet with non-stick spray. Combine cauliflower, egg, and mozzarella. Press evenly on the pan. Sprinkle with fennel, oregano, and parsley. Bake for 12-15 minutes. Remove from the oven
Top with your favorite toppings – I chose to top with about ½ cup of shredded mozzarella, mushrooms, tomatoes, and green bell pepper, which was fantastic! You may also want to try adding baby spinach and grilled chicken.
Place under broiler at high heat until cheese is melted.
